Nakiri is designed for processing vegetables, and with it vegetables become strips, cubes or julienne bars of uniform size and shape. The blade of the knife is 180 mm long and allows you to process even harder or hard-skinned vegetables (e.g. carrot, pumpkin, etc.). Thanks to the wide, but on a thin blade, the cut will be straight and even.
Iseya I-series knives are made of 33-layer Damascus steel, with a high-quality VG-10 stainless steel cutting core in the middle. The side of the knife has a hammered or "tsuchime" surface finish. The D-shaped handle is made of dark boxwood and the reddish ring part is made of mahogany.
