800 Series Knives are a little smaller than regular SANTOKU and USUBAGATA. The blade is HON-WARIKOMI, clad blade made of TAKEFU SHIRO-2 High carbon steel cutting core, sandwiched between SUS410 stainless steel which provides excellent edge retention, HRC 59 or more. The handle is riveted firmly with 2 points on the handle. O-Shaped simple handle without bolster is very popular edition.
