The long blade and "saw teeth" make slicing bakery products with this special bread knife a breeze.
The knives of the ST650 series are inspired by the Scandinavian forests. When designing this series, the goal was to create an ergonomic handle that would be suitable for both beginners and experienced chefs. The handle should be equally comfortable regardless of the way you hold the knife in your hand.
The beautiful damascus pattern of Noah's steel is nice, but certainly not the most important figure in this knife steel. Namely, powder steel ST650, which is used as a cutting core, is one of the most modern and best available knife steels. Proof of this is also the CATRA cutting test score of 820 conducted on knife steel, which is above most of the steels used on cook knives, i.e. also superior to Japanese steels.
Knives of the ST650 series are sharpened at an angle of 15°, and the steel temper is 62-63 HRC. The handle is made of French olive wood, which has undergone a special treatment process, including several drying and irrigation cycles, to ensure full stability and durability of the wood material.
Over the past few years, chef knives from the ST650 series have received a lot of positive feedback, especially from professional chefs.
