Nakiri is intended for processing root crops, and with its help vegetables turn into strips, cubes or julienne billets of uniform size and shape. With Nakiri, you can also process harder or hard-shelled root vegetables (e.g. carrots, pumpkins, etc.) well. Thanks to the wide but thin blade, the cut will be straight and even.
The knives of the ST650 series are inspired by the Scandinavian forests. When designing this series, the goal was to create an ergonomic handle that would be suitable for both beginners and experienced chefs. The handle should be equally comfortable regardless of the way you hold the knife in your hand.
The beautiful damascus pattern of Noah's steel is nice, but certainly not the most important figure in this knife steel. NImelt powder steel ST650, used as a cutting core, is one of the most modern and best knife steels available. Proof of this is also the CATRA cutting test score of 820 conducted on knife steel, which is above most of the steels used on cook knives, i.e. also superior to Japanese steels.
Knives of the ST650 series are sharpened at an angle of 15°, and the steel temper is 62-63 HRC. The handle is made of French olive wood, which has undergone a special treatment process, including several drying and irrigation cycles, to ensure full stability and durability of the wood material.
