The cutting core of the SAKON Ginga knives is Ginsan 3 steel (HRC 60). Although it is a stainless steel in terms of its properties, it gives the impression of carbon steel rather when both cutting and sharpening. The ginga cutting core is supported by softer outer steel layers (SUS405). Nashiji or the so-called "pear skin" grain finish is personalized and also helps to prevent food sticking.
