A Japanese chef's knife with a blade length of 175 mm. In terms of the shape of the blade, it is a cross between a chef's knife (gyuto) and a vegetable chopping knife (nakiri). The tip of the blade is directed downwards from the center of the knife, so when chopping, the knife finds more stable support on the work surface. Thanks to the wider blade, the santoku very convenient to lift chopped food from the cutting board into the pot.
