Santoku is a cross between a cooking knife (gyuto) and a chopping knife (nakiri). The tip of the blade, which is directed downwards from the center of the knife, allows you to find a more stable support on the work surface and a larger cutting surface. Well suited for cutting and chopping meat, fish, vegetables and fruits. Santoku is a very popular utility knife in Japanese homes. Thanks to the wider blade, it is very convenient to use the santoku to lift chopped food from the cutting board to the pot.
The classically shaped boxwood handle feels comfortable in the hand as expected. The cutting properties of the 33-layer VG-10 steel and the retention of sharpness exceed expectations.
Thanks to the full-tang fastening with 3 rivets, the knives of the Universal series have a strong construction and are well balanced. The wavy pattern or "hamon" of Damascus steel and the hammered "tsuchime" surface treatment ensure that each knife has a unique appearance.
The competitive price of Universal knives compared to other Damascus steel knives of the same type is also worth mentioning. Senzo Universal allows you to experience the experience of working with a Japanese chef's knife in the most authentic way.
